Blackened Mahi Mahi with Grilled Peach Salsa

Ingredients
For the fish:
- 2 6 oz mahi mahi filets
- 1 tablespoon “Honey Cajun Rub”
- Coconut oil, as needed
- Lime wedges, for garnish
For the grilled peach salsa:
- 2 peaches, halved
- Coconut oil, as needed
- 1 tomato, cubed small
- 1 jalapeno, ribs and seeds removed, diced small
- ¼ red onion, finely diced
- 2 tablespoons chopped cilantro
- Juice of 1 lime
Directions
- In a small bowl, combine the “Honey Cajun Rub”. Coat the mahi mahi filets with the seasoning mixture.
- In a large skillet over high heat, add the coconut oil. Once the pan is very hot, add the fish filets. Cook until blackened on both sides and cooked through, about 3-4 minutes per side.
- Brush the peach halves with melted coconut oil. On a grill or on a grill pan, grill the peaches until they are slightly charred and softened. Once grilled, cut the grilled peaches into cubes.
- Combine the peaches with the remaining salsa ingredients. Serve atop of the blackened mahi mahi.
