Blackened Mahi Mahi with Grilled Peach Salsa

Ingredients

For the fish:

  • 2 6 oz mahi mahi filets
  • 1 tablespoon “Honey Cajun Rub”
  • Coconut oil, as needed
  • Lime wedges, for garnish

For the grilled peach salsa:

  • 2 peaches, halved
  • Coconut oil, as needed
  • 1 tomato, cubed small
  • 1 jalapeno, ribs and seeds removed, diced small
  • ¼ red onion, finely diced
  • 2 tablespoons chopped cilantro
  • Juice of 1 lime

Directions

  • For the fish:
        1. In a small bowl, combine the “Honey Cajun Rub”. Coat the mahi mahi filets with the seasoning mixture.
        2. In a large skillet over high heat, add the coconut oil. Once the pan is very hot, add the fish filets. Cook until blackened on both sides and cooked through, about 3-4 minutes per side.
  • For the salsa:
      1. Brush the peach halves with melted coconut oil. On a grill or on a grill pan, grill the peaches until they are slightly charred and softened. Once grilled, cut the grilled peaches into cubes.
      2. Combine the peaches with the remaining salsa ingredients. Serve atop of the blackened mahi mahi.
